Chicken Fried Rice

Chicken Fried Rice

Total Time: 50 hour
Prep Time: 20 minutes
Cook Time: 30 minutes
Yield: 6 servings

Ingredients
Rice (whatever type you like to use, I prefer basmati) - enough for 6 servings
1 can of chicken breast (or 2 chicken breasts, cooked and shredded)
1 egg (optional)
1-2 cups of your choice of veggies, cut into small pieces
Oriental seasoning (I prefer Epicure's Aisian Stir-fry seasoning)
1-2 Tbsp of soy sauce (low-sodium brand)
1 Tbsp of extra virgin olive oil or coconut oil

Cook the rice as per package, I prefer to cook my rice in some chicken or vegetable stock.  It gives the rice a great flavour.  Place oil in a large skillet and heat at medium.  Brown the chicken, add the veggies and cook until they are tender-crisp.  Scramble the egg and set aside.  Add the rice to the chicken and veggies, mix well.  Add the egg, seasoning and soy sauce.

Serve by itself or with a nice green salad.

Enjoy!!
